Green Goddess Sandwich Recipe

Our Operations Manager Brad shared this delicious recipe:

"When I want to eat a huge sandwich and still feel good about myself, this is my go-to. It’s essentially an entire salad between two slices of bread. Divine!" - Brad Stanton


The Dressing 

Makes enough for 2-3 sandwiches

Ingredients:

6 tbsp mayonnaise

1 tbsp lemon juice

Small handful parsley, roughly chopped

Small handful basil, roughly chopped

Small handful dill, roughly chopped

1 tbsp capers, roughly chopped

Salt and pepper, to taste

Throw all the ingredients into a jar fit for an immersion blender and blend until smooth and creamy. Taste and adjust seasoning.

*Note: If you don’t own an immersion blender a regular blender should work well, but if you use a food processor you may need to double the recipe.


The Sandwich

Ingredients:

2 slices bread (something dense and grainy, preferably)

50g broccoli microgreens

½ an avocado, sliced

Fresh mozzarella, sliced

Cucumber, sliced, or cut into spears

Dill pickle, sliced, or cut into spears

Green onion, sliced

To assemble, toast the bread, spread 1 tbsp of the dressing on each side, and stack the fillings on top. If you need to take instagram photos, consider wrapping the sandwich in deli paper, like I did.
